Trivia Question❓

What famous outlaw was rumored to have hidden out in the San Luis Valley after robbing a bank in Creede in 1892?

Answer at the bottom of the newsletter

The Rio Grande Headwaters Restoration Project admitted responsibility for a significant fish die-off along a 7.2-mile section of the Rio Grande near Del Norte, Colorado.

This event was triggered during upgrades to the Farmers Union Canal Diversion and Headgate, which aim to improve habitats and modernize local irrigation.

Due to a tight construction schedule and unpredictable weather, river flows were reduced, unintentionally drying out stretches of the river and causing extensive fish mortality.

Biologists from Colorado Parks and Wildlife estimate fish recovery could take three to five years.

Both brown and rainbow trout of varying ages, as well as other aquatic life, were severely affected.

Restoration efforts are underway, with agencies collaborating to return flows to the Rio Grande.

Supported by a $1.27 million federal grant, the ongoing project is set to finish in early April and promises long-term ecological and agricultural improvements despite this setback.

In the San Luis Valley, intense blowing dust can quickly cause a sudden “brownout,” dropping visibility to near zero, especially by open fields on dry, windy days.

These dust storms are dangerous because drivers may not see stopped vehicles ahead, risking multi-car pileups.

If you encounter heavy dust, avoid stopping in the travel lane—carefully slow down, turn on headlights (but not high beams), and move your vehicle entirely off the road if you can’t see.

Once safely off the road, turn off your lights and take your foot off the brake so others don’t follow your taillights by mistake.

Stay put until visibility improves—dust clouds can pass quickly, but only re-enter traffic when conditions are clear.

Locals should check wind advisories and watch for dust ahead, particularly near farmland or recently tilled areas.

Above all, stay calm and never stop in the lane to keep yourself and others safe.

Smoked Elk Round Roast

Light smoke + green chile + mountain herbs — tender, sliceable, and Valley-approved.

Prep
15 min
Smoke
~2–4 hrs*
Target Temp
Pull at 130°F
*Time varies by roast size and smoker conditions. Go by internal temp, not the clock.

Ingredients
Elk
  • 1 elk round roast (about 2–4 lb)
  • 1–2 tbsp olive oil (or neutral oil)
San Luis Valley Dry Rub
  • 1 tbsp kosher salt
  • 2 tsp black pepper
  • 2 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp cumin
  • 1/2 tsp crushed rosemary
  • Pinch cayenne (optional)
  • 1 tsp brown sugar or 1 tsp San Luis Valley honey (optional)
Optional Green Chile Baste (moisture + Valley flavor)
  • 1/2 cup beef broth (or chicken broth)
  • 1/4 cup green chile purée or finely chopped roasted green chile
  • 1 tbsp honey
  • Squeeze of lime
Wood + Smoker
  • Wood: apple, cherry, or pecan (best for elk)
  • Water pan: fill with hot water (recommended)
  • Instant-read thermometer or probe thermometer

Directions
  1. Season: Pat the roast dry. Rub with oil, then coat evenly with the dry rub. Let it sit at room temp for 30–60 minutes while the smoker heats.
  2. Preheat the electric smoker: Set to 200–225°F. Add wood (apple/cherry/pecan) and place a water pan inside for moisture.
  3. Smoke: Place roast on the rack (or on a wire rack over a drip pan). Insert a probe into the thickest part. Close the door and smoke until the internal temp hits 130°F.
  4. Optional baste: If using, lightly brush the roast every 45 minutes (don’t over-baste—just a thin coat to keep it juicy and add green chile flavor).
  5. Rest (do not skip): Pull at 130°F, tent loosely with foil, and rest 15–20 minutes. Carryover heat will bring it to ~135°F (ideal for elk).
  6. Slice thin: Slice across the grain, as thin as you comfortably can. Thick slices can turn chewy—thin slices stay tender.
San Luis Valley Tips
  • Green chile level: Mild for family-friendly, hot if you want that Valley kick.
  • Too lean? If your roast is very small/lean, consider a light bacon wrap or set the smoker closer to 200°F.
  • Doneness guide: Rare 125°F • Med-rare 130–135°F • Medium 140°F (firmer).
  • Serve it Valley-style: Green chile mashed potatoes, pinto beans, and warm tortillas for smoked elk tacos.

Serving idea: Pile thin slices into tortillas with roasted green chile, a squeeze of lime, and a sprinkle of queso fresco.
